Ingredients 40 g dates or figs
40 g sultanas
1 cup grated carrot (about 2 medium)
50 g oats
50 g Weet Bix
1 tbsp coconut oil
1 tbsp honey
1½ tsp cinnamon
¼ tsp nutmeg
2 tbsp coconut, plus extra for rolling
100 g walnuts
Put all the ingredients into the processor or blender.
Process until combined.
Roll into about 30 small balls.
Roll them in the extra coconut, or you could use cacao.
Store in the fridge - great for lunchboxes, and the children will not know there is carrot in them!
