Carrot Cake Loaf

This is a lovely loaf that is easily put together for morning tea or lunchboxes. It is full of carrots, sultanas and walnuts with a little hint of spice.



Carrot Cake Loaf


Preparation Time: 20 minutes
Cooking Time: 45 minutes
Serves: makes 1 loaf

Ingredients
1 3/4 cups self raising flour
1/2 cup brown sugar
2 eggs
125 grams melted butter
150 ml milk
2 medium carrots grated
1/2 cup sultanas
1/2 cup walnuts
1 teaspoon cinnamon
1/2 teaspoon nutmeg

Method
Grease and line a loaf tin and preheat the oven to 180 degrees.
Sift the flour and spices into a large mixing bowl.
Add the sugar, carrot, sultanas and walnuts to the bowl and incorporate them well.
Form a well in the centre of the mixture. Pour in the milk, butter and the eggs.

Combine well with a spoon until the mixture forms a thick batter.
Evenly spoon into the pan and smooth over the surface.

Bake for 45 minutes until a skewer inserted into the centre comes out clean.
