Preheat the oven to 180°C and line a large baking sheet with a parchment paper.
In a large bowl, mash the bananas. Then, add the oats, oat flour, coconut oil, shredded carrots, dried cranberries, chopped walnuts, coconut flakes, salt, cinnamon and nutmeg. Mix well all the ingredients.
Drop the cookie dough into 10-12 rounded scoops on the baking dish. Using a damp spoon, flatten the cookies slightly.
Bake the cookies for about 20 minutes until golden brown. Cool on the baking sheet for about 10 minutes before turning out onto a wire rack.
