Carrot Cake Oats

Another weekend and another bowl of oats spiked with a vegetable, this time it's carrot! This sweet vegetable mixed with warming spices gives off the flavour of carrot cake but is healthy and nourishing.

Carrot cake oats.


Preparation Time: 1 minutes
Cooking Time: 6 minutes
Makes: 1 servings

Ingredients
1/3 C rolled oats
1/3 C water
1/3 C Almond milk
1 egg white
1 small carrot
2 tsp honey
1 tsp of tahini or nut butter
1 tbsp Greek yogurt
Dash of cinnamon and ginger.



Method

Grate and peel one small carrot and add it to a pot with the oats, 1 tsp honey, water, dash of cinnamon and a dash of ginger.


Bring oats to the boil and allow to bubble away for a minute or two, add the milk and yogurt and continue to stir.


Working quickly stir in the egg white and mix continuously so there are no clumps of egg. The egg white makes these oats nice and fluffy.


Pour carrot cake oats into a bowl and garnish with honey, tahini and another dash of each spice.

Enjoy


NOTE: These ingredients can be combined into an oven safe dish and baked to make a carrot cake textured breakfast as well.
