Carrot Chips

A healthy alternative to potato chips, these chips are hard to make, but they are so good you will be be left wanting more.



Cooked carrot chips
The first batch and the best batch of chips I made


Preparation Time: 5 minutes
Cooking Time: 25 minutes
Makes: 1 small serving or more depending on how much carrot you want to peel

Ingredients
Part of 1 carrot about 20 - 30 ribbons
1 tablespoon of olive oil
1/4 teaspoon of himilayan salt
1/2 teaspoon minced garlic (optional)

Method
Once carrots have been peeled use the peeler to peel thin ribbons of carrot into a bowl.
Peel enough to cover one baking tray.
Line baking tray with baking paper.
Preheat oven to 180 degrees celsius.
Add in salt and olive oil to the carrots.
Add in garlic if you want garlic chips and mix through all ingredients to coat carrots well.

Place ribbons of carrot onto baking tray in a single layer.

Carrots need to be laid out on baking paper likes this (note- carrots this thick did not come out crispy)


Place in the oven and cook for 25 minutes.
Carrots will come out crunchy and delicious. Best to be eaten straight away as I cannot guarantee they will stay crunchy for long.
The thick carrots I cooked did not come out crunchy, perhaps they needed to be cooked longer but the really thin ones were delicious.
