Carrot Dahl

We eat dahl a few times a month, it is usually a lazy Sunday night dish that my husband prepares when I can't be bothered cooking. After many months of delegating the dahl duties to my husband, I decided I would have a try at making it. This dish was super easy to make and made the house smell amazing! I served this carrot dahl with homemade naan breads for a satisfying meal.



Carrot dahl


Preparation Time: 2 minutes
Cooking Time: 25 minutes
Makes: 4 servings

Ingredients
1 cup red lentils
2 carrots
4 cups water
1 tbs extra virgin olive oil
1 onion
1 tsp paprika
2 tsp garam masala
1 inch ginger
1 tbs lemon juice
1 tsp salt

Method
Grate the carrots.
Combine the carrots, lentils and water in a medium sized saucepan, bring to the boil, then simmer for 20 minutes, stirring occasionally to prevent the bottom burning.

Dice the onion, grate the ginger.
Heat the oil in a frying pan and add the onion, spices and salt.
Stir and fry over a low-medium heat for about 5 minutes, until aromatic and starting to brown.
Add the lemon juice, stir through, and remove from heat.

Add the fried onion and spice mix to the lentils and continue to simmer for a further 5 minutes.
Remove from the heat and serve with naan breads.
