Carrot Fritters

Carrot fritters are lovely little golden parcels of deliciousness. They are easy to prepare and make a great lunch or snack.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 4 -6

Ingredients
3 carrots, grated
1 potato, grated
1 cup plain flour
1/2 cup milk
1 egg, whisked
salt and pepper
oil for frying

Method
Combine the carrots, potato, flour, milk and egg in a bowl. Mix to combine then season with salt and pepper.

Heat oil to a medium high heat in either a frying pan or deep fryer. Place spoonfuls of mixture into the oil and cook for 3 minutes each side until golden and cooked through.

Repeat until all the mixture is used.
Drain the fritters on paper towel and serve with greek yoghurt.

You could add cumin, chilli or coriander to the mix to enhance the flavour.
