Carrots With Cream And Lemon

This is a tasty easy recipe when you want to dress up cooked carrots. It is good for any time you are serving meat and three (or more) veg and want to add a bit of variety to the meal.



Carrots With Cream And Lemon


Preparation Time: 10 minutes
Cooking Time: 4 minutes in microwave, longer on stove top
Makes: 4 servings

Ingredients
2 medium sized carrots
1 dessertspoon butter
1 teaspoon lemon juice
1 tablespoon thickened cream
1 teaspoon finely chopped chives, garlic chives or parsley
freshly ground pepper
sprinkle of salt (optional)

Method
Peel carrots, cut off top and end.
Cut into rounds.
Cook for approximately 4 minutes in microwave until cooked or boil in saucepan on stove top.
Drain.

Drain carrots


Place drained carrots in small bowl.
Add butter and stir gently so heat of cooked carrots melts the butter.

Add lemon juice and cream.



Add Cream
Add cream


Stir gently.
Sprinkle with freshly ground black pepper to taste.
Sprinkle with a little salt (optional).
Sprinkle with chopped herb of your choice.



Sprinkle With Chives
Add chopped herbs


Stir gently to distribute.
Serve with steak, grilled lamb cutlet, chicken or fish and other vegetables of your choice.
