Cauliflower Cheese

A classic favourite, cauliflower with cheese sauce is a great side dish for almost any roast or stew. Rich and creamy, it's a particularly good comfort food for winter and can be enjoyed on its own or with a salad as a simple meal. Broccoli can be substituted for the cauliflower or use some of both for a more colourful dish.

Mouthwatering golden brown cauliflower cheese


Preparation Time: 15 minutes
Cooking Time: 45 mins at 180 degrees C
Makes: 4-6 servings

Ingredients

1 medium cauliflower
1 tablespoon butter
2 tablespoons self raising flour
1 cup milk (or stock)
3 tablespoons grated cheese (tasty, mozarella, or edam work well)

Method

Break the cauliflower up into floretts.

Cook in boiling salted water until just tender.

Drain the cauliflower and place in an ovenproof dish.

Melt butter in a saucepan, add the flour and stir with a wooden spoon over a gentle heat until the mixture forms a paste.

Slowly add the milk, stirring until the mixture thickens to a creamy consistency.

Add the grated cheese and continue to stir until the cheese is well combined.

Pour the cheese sauce over the cauliflower, sprinkle a little extra grated cheese on top and bake in the oven until golden brown.
