Cauliflower Fritters

Do you struggle to get your children to eat their cauliflower? These delicious little fritters are quick to make and the kids tell me they are so much nicer than steamed cauliflower. Try them today.


Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 4

Ingredients
150 g plain flour
1 1/2 tsp ground cumin
1 1/2 tsp ground coriander
1 tsp bicarb soda
1/2 tsp turmeric
250 g greek yoghurt
3 eggs, whisked
350 g cauliflower
Vegetable oil, for shallow frying
Lemon juice, to serve

Method
Add the flour, cumin, coriander, bicarb soda, turmeric, yoghurt and eggs to a medium bowl and stir till well combined. The mixture will become aerated and a bit fluffy.

Cut the cauliflower into florets.

Add oil to a pan to a depth of around 5 cm. Heat to a medium heat. In batches, dip florets in the batter then add them to the oil. Cook for 3 minutes, turning them as they cook, until golden.
Use a slotted spoon to remove the fritters from the oil. Drain on paper towel.
Repeat with remaining florets and batter.
Serve hot, drizzled with lemon juice.
