I recently dined at a posh waterfront restaurant,Sails on Lavender Bay and I was quite taken by this dish. I decided to create my own healthy version of it and I must say the result was quite spectacular.
Cauliflower is such a good vegetable and it is in season now. I added a load of cauliflower into this dish along with macaroni, cheese and truffle oil.
This would make a great family dinner in the cooler month. Plus it is very cheap and easy to make!
