Cauliflower Pizza Pie

A while ago my mum directed me to some recipes for cauliflower pizza bases. The cauliflower bases are a very clever way to make pizza healthier and less calorific, but I had just one little problem with them: they taste like cauliflower. Now that is not a problem if you like cauliflower, but if like me, you detest the stuff, it's not so good.

I therefore decided to go for a slightly more traditional pizza base that integrates the cauliflower into it. In this recipe you get an extra portion of veggies, but without the cauliflower taste.

A 'pizza pie' is what Americans call their pizzas, but here I have taken the name because the the base climbs up the sides into a kind of tart or pie casing.

Preparation Time: 45 minutes
Cooking Time: 50 minutes
Makes: 4 servings

Ingredients
1 cauliflower
500g white bread flour
2 eggs
3 tsp mixed herbs
1 tsp paprika
1 x 400g tinned tomatoes
2 tbsp lemon juice
100g cheddar cheese
100g cooked chicken pieces (optional)
2 tbsp coconut oil
3 cloves garlic

Method

Pre-heat the oven to 180 ༠C/ 160 ༠C fan/375 ༠F/5 Gas.

Remove the leaves from the cauliflower and blitz the head in a food processor for a rice-like consistency.
Beat in the eggs, 2 tsp herbs, and paprika.

Knead in the flour so that it forms a rollable dough.

Roll out the dough and use a sandwich or tart tin to cut out four round bases.

Line the sandwich tins with the bases and brush with 1 tbsp melted coconut oil.

Bake in the oven for 25 minutes.

Chop the garlic and then fry with the remaining ingredients.
Simmer for twenty minutes, while stirring, until the sauce is reduced.

Spread the sauce over the pizza bases.

Grate the cheese and spindle over the top of the bases.

Scatter the chicken pieces on top and bake in the oven for another five minutes or until the cheese has melted.
