Ingredients 1 whole cauliflower
2 table spoon of cooking oil
1/2 onion sliced
2-3 cloves of minced garlic
1 teaspoon of minced ginger
1 and 1/2 cups of frozen mixed vegetable
1 or 2 eggs bitten (optional)
1 tablespoon of soy sauce
salt to taste
Bunch of chopped spring onion
Bunch of chopped cilantro or coriander
Wash the cauliflower, cut off the stems and then cut the cauliflower into chunks.
Place the cauliflower chunks into a food processor and process until rice like consistency. Be careful not to puree your cauliflower.
Processed rice like consistency cauliflower.
Heat oil in a skillet pan.
Add sliced onions, minced garlic and ginger once the oil is heated.Saute the onions, ginger and garlic until the onions becomes translucent.
Thaw frozen mixed vegetables before cooking. Add frozen vegetables and saute for another 5 minutes.
Add processed cauliflower, soy sauce and salt.
Mix everything well and cover it for few minutes.
Once everything is cooked sprinkle chopped coriander and spring onions.
This is optional but, to serve poach eggs and place it on the cauliflower.
