In the mood for pita, but couldnít be bothered wrestling with the dough? With this recipe, you donít have to. Using filo pastry as a substitute for the homemade variation required of traditional pita recipes, you can create a meal thatís just as yummy as the original and in less than half the time. Preparation Time: 15 minutes
Cooking Time: 30 minutes
Makes: 4 big or 8 small servings
**The easiest way to chop spinach is to first cut the leaves away from the stalk. Next, stack the leaves one on top of the other and roll them as you would a pancake. Cut the roll down the middle lengthways and slice away. Chop stalks as you normally would.
Using fingers, combine spinach, eggs, cottage cheese, feta, mozzarella and ground nutmeg.
Season with salt and white ground pepper.
Take 4 sheets of pastry and spoon spinach mixture evenly as per image.
Using butter, brush edges of pastry before enclosing the filling.
Repeat steps 3 and 4 three times so that you end up with four pitas.
Brush pita with melted butter and bake for 30 minutes or until pastry is golden.
