Cheddar Scones

Most of the time we associate scones with afternoon tea, and spreading lots of cream and jam, but if you ever get tired of too many sweet things, cheddar scones are a good savoury alternative. If you want to give them a bit of a kick, you can use a flavoured cheese. I used mature cheddar and a cheddar with jerk sauce and chilli. Based on the brands I used, each scone is about 111 calories.

Preparation Time: 40 minutes
Cooking Time: 15 minutes
Makes: 15 servings

Ingredients
300g self-raising wholemeal four
1 tsp baking powder
75g cheddar cheese
75g margarine
55g spinach
175ml unsweetened almond milk
1 egg

Method



Rub the margarine into the flour and baking powder to make a breadcrumb like texture.



Grate the cheese and mix in 50g.

Mix in the spinach.

Beat the egg into the milk.



Beat the egg mixture into the flour mixture to form a dough, then wrap it in cling film to chill for about ten minutes.

Pre-heat the oven to 200 ༠C/ 180 ༠C fan/375 ༠F/5 Gas.



Roll out the dough so that it remains quite thick, and use a cookie cutter to cut out the scones.



Sprinkle the remainder of the cheese on top of the scones.



Bake in the oven.
