For the meat patties 1 carrot, grated
1 clove of garlic, crushed (exclude for low FODMAP)
1 tbsp dried oregano
1 tsp thyme
1 cup parsley, finely cut
Salt and pepper, to season
1/4 cup breadcrumbs (gluten free if required)
1 cup grated cheddar cheese (lactose free if required)
500g beef mince
1 tbsp oil
To serve 1/2 iceberg lettuce, cut
1 large carrot, grated
1 cucumber, grated
1 tomato, cut
1 red capsicum, sliced
1 pear, finely sliced
Parsley, to serve
Mix the carrot, garlic, oregano, thyme, parsley, breadcrumbs and cheese in a bowl.
Mix the carrot, herbs and cheese
Add the mince and combine with your fingers.
Add the egg, 1 tbsp oil and season with salt and pepper. Mix using your finger tips.
Crack the egg onto the mince mixture
Make large meat patties and set aside on a covered plate in the fridge until ready to cook.
Preheat a frypan or barbecue plate on medium heat. When hot, add the oil and meat patties and cook for 3 minutes on each side, until slightly brown.
Cook the meat patties
While the patties are cooking place the salad ingredients in a bowl and toss to combine.
Serve the patties and slaw with rice or crusty bread.
