Cheesy Baked Stuffed Tomatoes

Coming up with new ideas for a quick and easy weekend brunch can be quite tricky. These Cheesy Baked Tomatoes can be prepared in no time and go perfectly with a combination of a healthy omelette or hash browns.

Preparation Time: 10 minutes
Cooking Time: 10-15 minutes
Makes: 4 servings

Whole firm tomatoes
Grated cheddar cheese
2 tsp mixed herbs
2 tbsp olive oil

Core the tomatoes carefully.
Mix the cheese and dry herbs.
Stuff with the cheese and herb mixture.
Drizzle some olive oil over the tomatoes.
Place them on a greased baking tray.

Bake in the oven for 10-15 mins or until the cheese. has melted and tomatoes cooked.
Serve with an omelette or hash browns.
