Cheesy Chicken Sticks

I got this recipe from my friend. I served it with mint yogurt sauce with lots of cucumbers and tomatoes.

Preparation Time: 30 minutes plus 30 minutes standing
Cooking Time: 30 minutes
Serves: 3

Ingredients
1/2 cup shredded mozzarella cheese (at room temperature)
2 tablespoon shredded cheddar cheese (at room temperature)
2 tablespoon cream cheese (at room temperature)
3 tablespoon corn flour
1 egg yolk
250 gm chicken breast
2 tablespoon green chilli paste
1 teaspoon crushed red chilli flakes
1 teaspoon ginger garlic paste
1 teaspoon vinegar
1/4 cup chopped coriander leaves
1 teaspoon dried fenugreek leaves
salt to taste

Method
Wash and dry chicken pieces.
Cut thin steaks out of chicken breast and make thick strips.
Add ginger garlic paste, vinegar, salt ( be careful with salt as cheese is salty too) on to chicken pieces, mix well and keep aside for 30 minutes.
Put mozzarella cheese and cheddar cheese in a mixing bowl.
Mash up well with hand to make it in to soft dough.
Add cream cheese, corn flour, egg yolk and mix everything together well to make it into a smooth paste.
Mix cream cheese mixture with mozzarella and cheddar cheese.
Season it up using green chilli paste, dried fenugreek leaves, coriander leaves and salt to taste (if needed).

Mix everything together properly with chicken, cover and refrigerate overnight.
Soak skewers in cold water for 30 minutes.
Arrange marinated chicken pieces on to skewers leaving enough space between chicken pieces.

Put the skewers on to baking tray in a way that they don't touch the bottom of the tray otherwise they will stick to the tray during baking.
Bake on 200 degree C.
After 15 minutes turn until both sides turn golden and chicken is fully cooked.
Serve hot with salad on the side.
