Cherry Bakewell Cupcakes

Yummy little cupcakes to satisfy that craving for cherries and almonds. They are perfect for bring and buy sales, coffee mornings and fund raising event.

Preparation Time: 30 minutes
Cooking Time: 15-20 minutes at 180░C
Makes: 12 cakes

Ingredients
150g butter at room temperature
150g caster sugar
100g self-raising flour
3 large eggs at room temperature
1 tsp baking powder
60g ground almonds
1 tbsp milk
90g raspberry jam

For the Icing
250g icing sugar, sieved
3 tbsp fresh lemon juice
12 glacÚ cherries


Method
Cream the butter until soft.

Add the caster sugar and continue to cream until light and fluffy.

Gradually mix in the eggs.

Fold in the sieved flour and ground almonds.

Incorporate all the ingredients and divide the mixture evenly between 12 cake cases in a muffin pan.

Bake until light golden and cooked.

Remove to a wire rack to cool.

Prepare the icing by mixing the icing sugar and lemon juice together until smooth.

Once the cakes are cool remove the centre of each one with an apple corer.

Fill the holes with the jam.

Top with the glacÚ icing.

Finish each cake with a glacÚ cherry.
