These taste like cherry ripe, only healthier. The rolls are great snacks, party food and lunch box treats, and the balls have a cherry liqueur and Malibu for the adults, and are fantastic after dinner treats.
They are gluten, lactose, nut and refined sugar free.

Indulgent cherry ripe rolls and balls are great for parties or as a gift
Preparation Time: 10 minutes
Cooking Time: 0 minutes
Serves: 6 - 8 rolls and balls (or 12 - 16 rolls)
Ingredients
Cherry ripe mixture
1 cup dried cherries
1 cup dates, deseeded
1 tbsp water
1/2 cup desiccated coconut, for balls
2 tbsp cacao or cocoa
2 tbsp maple syrup
1 tbsp coconut oil
1/4 cup desiccated coconut, for rolling
For adults only cherry ripe balls
1 1/2 tbsp cherry liqueur
1 tbsp Malibu
Method
Place the dates, cherries and water in a food processor and blend until combined.
Add the other ingredients and blend until combined, 1 - 2 minutes (depending on your food processor)

Add the cacao, maple syrup, desiccated coconut and oil to the blended cherry and date mixture

The mixture will be sticky
Split the mixture in half.
Wet hands and roll tablespoon sized mixture into 5 cm logs with one half of the mixture. Roll in coconut and set aside.
Add the cherry liqueur and Malibu to the remaining mixture, blend for 30 seconds to combine.
Roll tablespoon sized mixture into balls and roll in desiccated coconut.
They can be served immediately or allowed to firm up in the fridge for 20 minutes.
Tips
Wet hands to roll the logs and balls as the mixture is sticky.
Cherries can be substituted for dried cranberries if required and still taste great.
For richer chocolate flavoured balls add Kahlua instead of cherry liqueur.
