A perfect way to start the day, this delicious vegan smoothie makes for a light yet filling breakfast. It's a little fiddly and messy pitting the cherries but the result is worth the effort; the cashews give it a smooth, creamy texture and the cherries a sweet, fruity flavour.
Ingredients 1 cup fresh pitted cherries
1 handful of cashews (best if soaked overnight for digestiblity and to soften)
1 fresh pitted date
1 cup water
Optional: 1/2 teaspoon each of flaxseed oil and hemp seed oil (I add them for essential fatty acids as I don't eat seafood)
Rinse the soaked cashews and discard the water they were soaking in
After pitting the cherries and the date add all ingredients to the blender and blend on high for 1 minute
