These melt-in-your-mouth, chewy, gooey brownies are the perfect combination of my two favourite ingredients- chocolate and peanut butter. Great for kids parties, picnics or just for a snack, you will be amazed at how quickly these disappear off the plate!

Cooking Time: 25-30 minutes
Makes: 9 large or 16 small servings
Chocolate Brownie 1/4 cup and 2 tablespoons unsweetened cocoa powder
1/4 teaspoon bicarbonate of soda
1/3 cup melted margarine
1/4 cup boiling water
1 cup sugar
2/3 cup all-purpose flour
1/2 teaspoon vanilla extract
1 pinch of salt
Peanut Butter Filling 3 tablespoons unsalted butter, melted
1/4 cup smooth peanut butter
1/4 cup crunchy peanut butter
1/3 cup icing sugar (confectioners' sugar)
1/4 teaspoon salt
1/2 teaspoon pure vanilla extract
Preheat oven to 180 degrees C. Grease a brownie tin or an 8x8 inch baking pan.
In a large bowl, sift together the cocoa and bicarbonate of soda.
Add the boiling water and half the melted margarine. Mix with a wooden spoon until combined and thickened.
Stir in the sugar, egg and the rest of the oil until well blended.
Sift in the flour and add vanilla extract and salt. Mix until the flour and wet mixture are just combined- don't overmix.
Peanut Butter Filling
Stir the peanut butter, melted butter and vanilla together until smooth.
Add icing sugar and salt, mixing until creamy in appearance.
Pour chocolate brownie mixture into the greased baking pan.
Dollop peanut butter filling onto the brownie mixture.
Using a butter knife, swirl the peanut butter and brownie mixtures together- be careful not to over-swirl.
Bake for 25-30 minutes, or until the verge of burning. Remove from the oven and allow to cool before serving.
