I LOVE peanut butter. It is honestly a staple in my dietary requirements. Needless to say, these peanut butter cookies are my absolute favourite PB cookie. I prefer crunchy peanut butter but if you're a smooth peanut butter kind of person, then definitely use that! I hope you love these as much as I do!
Ingredients 1/3 cup of peanut butter.
2 tablespoons of butter, at room temperature.
3/4 cup of brown sugar.
2 teaspoons of vanilla essence.
3/4 cup of plain flour, sifted.
1/2 teaspoon of baking powder.
2-4 tablespoons of granulated sugar.
Preheat the oven to 176 degrees celsius and line a tray with baking paper.
Sift the plain flour and baking powder together in a bowl and set aside.
In another bowl, cream peanut butter and butter together until smooth.
Add brown sugar and beat until combined. Add the egg and vanilla and beat until smooth and creamy.
Gradually add the dry ingredients to the wet ingredients, beating on low speed.
Pour granulated sugar onto a plate. Roll the cookie dough into small balls and roll the dough in sugar to coat completely.
Place evenly onto a baking tray, leaving approximately 2.5cm-5cm between each cookie.
Bake in the oven for 10-12 minutes, or until golden brown. Remove from oven and place on the bench to cool.
