Chicken and Broccoli Bake

Creamy flavours combine to create a delicious, somewhat unique taste that will make this comforting meal a sure winner with people of all ages.

Some of the broccoli around the edges gets crispy if it isn't covered in chicken and if this has a little cheese on top it is absolute heaven to bite into.



Melted cheese, chicken, sour cream and broccoli. What a combination. This is the kind of meal that screams to be taken as lunch the next day, if there is any left of course, because it is so yummy!

Preparation Time: 5 minutes
Cooking Time: 60 minutes
Makes: 4 servings

Ingredients
1 large bunch broccoli
2 Chicken breasts (or about 800g diced chicken)
1 tub sour cream
1 tablespoon curry powder
2 tablespoons chicken stock powder
2 cups grated cheese

Method
Set oven to 180 degrees Celcius
Cut chicken into large chunks and boil until cooked (about 10 minutes)
While chicken is boiling, cut broccoli into florets and place in the bottom of a 20cm x 20cm baking dish.



Once chicken is cooked, transfer onto a plate and shred gently with a knife and a fork into bite-sized pieces. Layer these on top of the broccoli in the baking dish.



Next combine sour cream, curry powder and chicken stock powder in a small dish.



Place this on top of the chicken in the dish and top with cheese.

Then place in the oven and bake until cheese is golden brown, approximately 40 minutes.

This is a wonderful dish, but the first time I made it it was so, so salty. That was the fault of the chicken powder (1st ingredient "salt"). 2nd time I omitted the powder, increased the curry to 3 tablespoons, par-boiled the broccoli, and put it in 350 f oven for 20 minutes. Absolutely delicious. It was even better reheated the next day.
Great recipe. Flavours were delicious. I thinned the sour cream down with 1/2 cup milk to make it more spreadable.
