This chicken and chorizo oven bake is a perfect mid week dinner. It's really easy to make but doesn't compromise on taste. Full of flavour from the in your face chorizo to the more subtle roasted garlic cloves.
Ingredients 2 chicken legs and 2 thighs (this will be enough for two people but you can easily up weight this if you have more guests).
2-3 large potatoes
6 garlic cloves unpeeled
Salt & pepper
Harissa spice mix (optional)
Preheat oven to 180 C
Cut up the potatoes into large wedges.
Add all the ingredients listed to a large ovenproof dish and mix well so they are lightly coated in olive oil.
Roast in the oven for 45mins until the chicken is cooked through and the skin is crispy.
Simply serve with a fresh salad on the side and I guarantee this will become a regular in your house.
