Chicken and Chorizo Pie

This is less creamy than my Chicken and Mushroom Pie but still just as delicious. Leeks make a great accompaniment for both chicken and chorizo.

Preparation Time: 20 minutes
Cooking Time: 30 minutes
Makes: 6 servings

Ingredients
1 pack ready-rolled puff pastry
1 onion
1 large leek
1 clove garlic
1 tbsp vegetable oil
1/4 roast chicken
4 small cooking chorizo sausages
2 tbsp white wine
3 tbsp crème fraîche
1 egg

Method
Preheat the oven to 180 Celsius.
Heat the vegetable oil in a large saucepan over a low heat.
Chop the leek and the onion and gently cook them in the oil for a few minutes.

FInely chop the garlic and add it to the pan with the onion and leek.
Turn up the heat, add the chorizo and chicken and cook until heated through.

Add the white wine and deglaze the pan for a few minutes so that any crispy bits get reincorporated into the sauce.

Turn down the heat again and add the crème fraîche.
Put the pie filling into a pie dish.

Unroll the puff pastry and lay it over the top. Trim the edges and then use any extra pastry to make some pastry cut-out shapes with a cookie cutter. Lay these on top.

Beat the egg and then brush it over the top of the pastry. Make a couple of holes in the pastry for the steam to escape.
Bake in the pre-heated oven for 20-30 minutes until the pastry is golden and the filling is bubbling.
