Ingredients For the pasta 2 lasagne sheets
1 tsp olive oil (any oil would do)
1/2 tsp salt
For the chicken spread 2 cups boiled and shredded chicken
1/2 cup sour cream
1/4 tsp each of curry powder, garlic powder, cinnamon powder
Pinch each of salt and pepper
Fresh or dry parsley, 1-2 tsp
For eggplant 1 eggplant (The one I used was about 6" long and I could make around 12 slices)
Salt to sprinkle
Oil for brushing
Other 12 slices of tomato
Pizza cheese or any blend that will melt
Cook them as per instructions on box. OR
In a wide pan take water, add oil, salt and lasagne sheets.
Let it boil. Check after a while if it is cooked al dente.
Wash chicken and take a deep vessel filled with water. Add salt. Cover and let it come to a boil. After that cook it without cover. You may add more seasoning and onion, carrot, etc to make a chicken stock. Keep removing the scum that forms on the surface.
Once the chicken is cooked, it will turn white. Allow to cool and make shreds.
Arrange slices in a plate and sprinkle salt to dehydrate the eggplant. After 5 minutes, you will see water droplets on the surface. Pat it with kitchen towel and arrange in a pan. Brush oil on both sides and cook. Let it brown lightly on both sides. Do not burn it.
Take sour cream in a bowl and lightly whisk with a fork or spoon. Add the seasoning mentioned above and mix well. Add the shredded chicken.
Once all the above are ready we can start making the layers. Preheat oven on 200 degrees.
Take a microwave/oven safe container in which you can make layers. So the depth has to be adequate. (approximately 3")
Brush lightly with oil
Arrange slices of eggplant.
Arrange slices of tomato. (let slices fill all gaps)
Spread cream and chicken filling.
Cover with 1 lasagne sheet.
Repeat the above layering.
Keep some chicken mixture to go on top of 2nd lasagne sheet.
Lastly spread cheese. Season with pepper and oregano.
Bake in the oven at 200 deg for 10 minutes first. Check and bake in 5 minute increments checking everytime till a golden crust forms.
You may add more veggies of your choice like corn kernels, mashed potato.
