Ingredients 250 g green prawns
¾ kg chicken pieces
¼ cup oil
¾ small onion, chopped
½ garlic, crushed
¼ cup flour
1½ cups chicken stock
¼ - ½ cup tomato puree
¼ tsp pepper
½ dstsp lemon juice
½ tsp thyme
¼ cup celery, chopped
¼ cup shallots, chopped
1 small red pepper, chopped
In a large pan cook the chicken pieces, turning occasionally. Remove from pan.
When they are cool, pull the meat off the bones and tear it into strips. Set aside.
In the same pan, add the chopped onion, and garlic and cook until the onion is transparent.
Stir in the flour, and stir for a minute or two.
Add the stock and tomato puree, and mix well.
Add the chicken, some salt, pepper, lemon juice and thyme and cook, covered, on a low heat for about 10 minutes. You need you check if you need more stock occasionally.
Add the chopped celery and simmer another 15 minutes and meanwhile peel the prawns.
Add the prawns for the last 3 - 5 minutes of cooking.
