Ingredients 700g of chicken breast or thigh
1 small red capsisum
3/4 cup of sliced black olives
1 tbsp garlic
3 tins 400g tomatoes
2 chicken stock cubes
2 handfuls of spinach leaves
Slice the onions and saute in butter.
Add the sliced capsicum and mushrooms and then cook until soft.
Add the olives and cut up the chicken.
Add the garlic and chilli flakes to the mix (depending on how spicy you like your casseroles).
