Chow Mein is a westernised dish based on Chinese cuisine and literally means 'fried noodles'. It is one of my favourite dishes that I usually buy as a ready meal. Recently I was inspired to make my own using the listed ingredients on the back of the package. I left out some aspects like added salt to make it healthier.

Serves: 4
Ingredients
410 g egg noodles
200 g chargrilled chicken, sliced
200 ml water
500 ml chicken stock
1 tsp ground turmeric
1 tsp paprika
1 tsp ground ginger
50 g bean sprouts
200 g cabbage leaves, shredded
200 g chestnut mushrooms, sliced
1 carrot, grated
2 cloves garlic, dice
1 tbsp lemon juice
2 tbsp light soy sauce
Method
Pour water into a hot frying pan, and add the noodles.
Stir in the vegetables and chicken, then put a lid over the top and allow the cabbage to wilt.
Stir the spices, soy sauce, and lemon juice into chicken stock, and gradually stir into the stir fry.
Remove the heat before all the liquid has been absorbed evaporated.
