Chicken Karaage Don

Chicken Karaage is Japanese fried chicken that is marinated in soy sauce and ginger. It has a crispy skin but succulent tender meat on the inside.



Preparation Time: 20 minutes
Cooking Time: 10 minutes
Makes: 4 servings

Ingredients
4 chicken thigh fillets, skin on, slice into big pieces

For Marinade
1/4 cup soy sauce
1 tablespoon grated ginger
a pinch of sugar

For Coating
1/2 cup cornflour
a pinch of salt

Vegetable oil, for deep-frying
Japanese steamed rice, to serve
Chopped spring onions, to serve

Method
Combine all the marinade ingredients in a bowl, add in the chicken, turning to coat. Leave to marinate for 15 minutes.
Remove the chicken from the marinade and use the paper towel to wipe dry.
In a large bowl, mix the cornflour with salt. Drop the chicken one by one into the flour mixture.
Heat the oil in a large saucepan to 190 degree C.
Dust off excess flour from the chicken and deep-fry for 1 minute.
Transfer the chicken to a rack and rest for 30 seconds.
Return the chicken to the oil and fry for 30 seconds, and rest for another 30 seconds.
Return the chicken to the oil and fry for 30 seconds.
Remove and rest for 1-2 minutes.
Serve in a bowl with Japanese steamed rice and chopped spring onions.
