Chicken & Mushroom Noodle with Beef Balls Soup

Mie Ayam Jamur is a popular Indonesian dish of egg noodle with chicken and mushroom cooked in soy sauce, serve with beef ball soup. It is a very tasty and comforting dish that is easy to cook.



Preparation Time: 10 minutes
Cooking Time: 40 minutes
Makes: 4 servings

Ingredients
2 chicken breast fillet, washed
400g can champignon mushroom pieces, drained
1 bunch choy sum, trimmed, chopped
4 cloves garlic, chopped
16 beef balls
800g packet fresh egg noodle
1 tbsp oyster sauce
1 tbsp soy sauce
2 tbsp kecap manis
1 tsp sesame oil
salt and white pepper powder
fried shallots, to serve

Method
Poach the chicken breast fillet in a pot of 1L boiling water until cooked through. Transfer the cooked chicken to a chopping board and roughly chop. Reserve the stock.



Heat oil in a frying pan, saute the chopped garlic until fragrant. Add in the chopped chicken and mushroom. Cook, stirring, for 3 minutes.



Add in oyster sauce, soy sauce, kecap manis, sesame oil and a few dashes of white pepper powder. Stir to mix until combined. Keep warm.



Bring the stock used to poached the chicken to the boil, add in the beef balls and choy sum. Cook for 3-4 minutes until choy sum has just wilted. Season with salt and white pepper powder. Keep warm.



In another pot, bring water to the boil. Loosen the noodle with fingers and gently drop into the water and cook for 2 minutes. Drain.



To serve, divide the noodle among bowls, spoon over the chicken and mushroom mixture and sprinkle with fried shallots. Divide the beef balls and choy sum soup in another bowls. Serve.
