Chicken, Mushroom & Pumpkin Risotto

This risotto is creamy and moreish. It packs a punch and will fill you up on a winter's evening. Perfect for dinner or lunch, this recipe will become a sure family favourite.

Preparation Time: 10 minutes
Cooking Time: 45 minutes
Makes: 6 servings

Ingredients
2 small onions
500g chicken thighs
1 tbs garlic
2 cups of button mushrooms
2 cups of roast pumpkin, cubed
Handful of baby spinach
1 cup of white wine
200ml cream
2 tbs butter
1 tsp curry powder
1 tbs chilli
1 tbs parsley
˝ tsp cayenne pepper
2 ˝ chicken stock
3 cups of rice of uncooked rice

Method
Slice the onions and sauté in butter in a saucepan.
Add the sliced mushrooms, garlic, curry, chilli, parsley and pepper.

Cut the chicken into small pieces and add to the saucepan.
When the chicken is cooked through, add 1 cup of the stock and the white wine.

Add the rice and gradually add the stock, slowly simmering the risotto.

You may need to add additional water.
When the rice is nearly cooked, add the roast pumpkin cubes and the spinach.
Stir through and pour in the cream.
Allow the sauce to reduce.
When the rice is cooked through, serve.
Season with pepper, salt and top with cheese.
