Chicken Poached in Milk & Broccoli Sauce

When you're out of wine, double cream, and the neccessary ingredients to make a fancy-dinner you can still whip up an indulgent meal with every day substitutes.

Preparation Time: 2 minutes
Cooking Time: 45 minutes
Makes: 2 servings

1 thyme sprig
2 basil leaves
1 tsp flour
2 chicken breasts
6 frozen broccoli florets
1 tblsp apricot jam
1 cup of brown rice
Pint of whole milk
1 tblsp butter
5 tblsps yogurt
1/2 tsp black pepper
1/2 tsp salt

Required ingredients

Pour the milk into a saucepan and add the chicken breasts along with all of the seasoning.

Turn the heat to a medium and cover with a lid for 35 minutes.

Wash the rice and place in a saucepan.

Cover with enough water to cover the rice (2 cups), and simmer for 30 minutes.

In a bowl mix the yogurt and jam together.

Add the flour.

Mix together until smooth.

Once the chicken has cooked for 25 minutes, pour the roux like mixture into the saucepan of poached chicken.

Keep stirring until all of the yogurt roux has mixed together with the milky stock, then add the butter and frozen broccoli.

Cover with the lid for a further 10 minutes.

Remove the lid from the rice and 'plate up'. Serve one chicken breast per portion and enjoy.
