Chicken Risotto

This is a great family dish, one that is certain to have the kids asking for it again and again. Risotto is so versatile and yet so simple with its thicky, creamy texture.

Preparation Time: 15 minutes
Cooking Time: 30 minutes
Makes: 4 servings

Ingredients
3 medium sized chicken breasts
2 cups arborio rice
1 tin garden peas and sweetcorn mix
3 tbsp green pesto
1 onion, diced
2 garlic cloves, finely chopped
2 handfuls of cheddar cheese, grated
1 stock cube
Salt and pepper

Method
Chop up the chicken fillets into small cubes.

Fry the diced onions and garlic together in a large saucepan.

Brown the chicken pieces along with the onion and garlic, until they are a slight golden colour.

Add the arborio rice to the saucepan, and pour boiling water to just cover the mixture.



Allow it to simmer as the water is absorbed by the rice and the risotto begins to thicken.

Crumble in the stock cube, and stir in the pesto.



Stir in the grated cheese, making the risotto really creamy and thick.

Add salt and pepper to flavour according to taste.



Enjoy with an extra dollop of green pesto if you wish!
