Serves: Makes 12
Ingredients
2 tbsp chopped fresh sage
Salt and freshly ground black pepper
2 skinless chicken breast fillets
A little extra oil for frying
Fresh herbs for garnishing
Wooden skewers, soaked in cold water
Method
Combine oil, sage, salt and pepper.
Cut each chicken fillet into 6 long strips
Combine sage oil and chicken.
Cut prosciutto slices in half lengthways.
Lay out one slice of prosciutto and place 1 strip of chicken on top.
Thread prosciutto and chicken onto skewers.
Heat a large pan over a medium heat and cook skewers for 5 to 6 minutes on each side.
Arrange attractively on a large platter, garnish and serve.
