Chicken Stroganoff Lasagne

Chicken stroganoff lasagne is a great meal to serve when you're looking for something a little different. It's sure to be a crowd pleaser.

Preparation Time: 20 minutes
Cooking Time: 60 minutes
Serves: 6-8

2 tbs oil
1 onion, diced
1 garlic clove, crushed
300-500 g mushrooms, sliced
500 g chicken fillet (breast or thigh), diced
2 tsp paprika
2 tbs Worcestershire sauce
1 cup chicken stock
1 cup sour cream
Salt and pepper, to taste
Lasagne sheets
100 g grated cheese

Preheat oven to 180C and grease a large baking dish.
Heat 1 tbs oil in a pan over medium high heat, add the onions, garlic and mushrooms and cook for 5 minutes until the onions have softened. Remove from heat and set aside.

Heat 1 tbs oil in a pan over medium high heat and cook the chicken for 4-5 minutes until golden. Return the mushrooms, garlic and onions to the pan.
Add the paprika, stock and Worcestershire sauce to the pan. Stir well then simmer for 5 minutes.
Stir in the sour cream. Season with salt and pepper
In your baking dish, place a layer of chicken stroganoff, followed by a layer of lasagne sheets and repeat until all the mixture is used (finishing with the top layer as stroganoff).
Sprinkle the grated cheese over the top and bake for 40 -45 minutes.

Serve with a side salad.
