‘Chickpeas Masala’ or popularly known as ‘Chole’ is an authentic dish of North India which is loved by people of all age groups. The versatility of the dish makes it go with Breads, Puri, Chapathi and even with the fast foods like Aalu tikki.
Soaking Time - 7 to 8 hours (or overnight for better results)

Makes: 6-7 servings
2 Cups Chickpeas (Chole)
1 finely chopped Onion
1 finely chopped Tomato
2 Garlic cloves
1 tsp grated Ginger
1 tsp Cumin Seeds
1 tsp Coriander Powder
1/2 tsp Turmeric Powder
2 tsp Chole Masala or Garam Masala (available at all Indian grocery shops)
1-2 pieces of small Cinnamon
1-2 Bay Leaves
Finely chopped Corriander leaves
2 tsp oil
Take 2 cups of Chickpea and soak it for a minimum of 6-7 hours in hot water. For better results, soak it overnight. Add 1 tsp of salt to the contents and transfer it to a Pressure cooker to soften it.
Add 2 tsp of oil in a frying pan and add cumin seeds, bay leaves and cinnamon and stir it for about half a minute.
Add chopped onions and stir it till it turns golden brown in color. Now mix the chopped tomatoes and add the ginger garlic paste.
When the above ingredients get soft, add turmeric powder, coriander powder, red chilli powder and garam masala to spice up the taste. Add about half a glass of water and let it cook in a medium flame for 4-5 mins. Make sure to keep stirring it slowly.
Once the masala gets thickened and cooked properly, add the chickpeas and mix them. Add a little salt as per taste, and blend it with the masala. Heat the mixture for around 5 minutes, so that the chickpeas get mixed with the masala properly.
Garnish the chickpeas masala with coriander and serve it hot with Puris or Bread.
