Ingredients 1 onion, chopped finely
400g tin Tomatoes
1/4 tsp dried mixed herbs
1 tsp dried tarragon (I did not use this)
410g tin Pears in natural juice
600 ml vegetable stock -made with stock cube
juice of 1 lemon
salt & black pepper
Add a bit of oil or preferably spray a non-stick saucepan with low fat spray, and cook the onion until soft.
Add the rest of the ingredients.
Cover and simmer gently for 20 minutes.
Liquidise to a smooth consistency.
Check the seasoning and if necessary, gently reheat.
If serving cold, chill first, and add parsley sprigs on the top (optional).
It has a very unusual but delicious taste--see if any of your friends can guess the ingredients.
