Ingredients 250g beef mince
1/2 brown onion
2 cloves garlic
3 tablespoons tomato sauce
1 cup beef stock
1 teaspoon chilli powder
1 teaspoon pepper
1/2 cup rice (cooked for 10 mins in the microwave with 1 cup of boiling water)
1/2 tin refried beans
Chop onion, garlic, capsicum and chilies. Add onion and garlic to a saucepan with a little cooking oil and fry for a few minutes.
When the onion is soft and slightly browned, add the chilies and capsicum. Fry for a few more minutes.
Add mince to the pan and fry until brown all over.
Add tomato sauce, stock, chilli powder and pepper.
Simmer for about ten minutes, or until the stock has reduced to a desirable amount.
