Chilli con Carne

This is the recipe you need to sneak in some veggies, even your husband won't mind.



Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 6 servings

Ingredients
2 teaspoons olive oil
1 kg lean beef mince
2 medium brown onions, finely chopped
2 medium red capsicums, chopped
3 garlic cloves, crushed
1 long red chilli, chopped
400g can corn kernels
800g can chopped tomatoes
400g can red kidney beans, drained, rinsed
1 tsp ground cumin
1/2 tsp salt
1 bunch coriander, separate the stalk and leaves

Method
Heat a pan with the oil.

Add the mince and cook until evenly brown. Use a wooden spoon to stir and break the mince.

Add the onion, capsicum, garlic, chilli, corn, chopped tomatoes, kidney beans, cumin, salt and coriander stalks. Bring to boil and cooked evenly.

Adjust seasoning, turn off the heat.

Garnish with coriander leaves on top.
