Ingredients 2 teaspoons olive oil
1 kg lean beef mince
2 medium brown onions, finely chopped
2 medium red capsicums, chopped
3 garlic cloves, crushed
1 long red chilli, chopped
400g can corn kernels
800g can chopped tomatoes
400g can red kidney beans, drained, rinsed
1 tsp ground cumin
1/2 tsp salt
1 bunch coriander, separate the stalk and leaves
Heat a pan with the oil.
Add the mince and cook until evenly brown. Use a wooden spoon to stir and break the mince.
Add the onion, capsicum, garlic, chilli, corn, chopped tomatoes, kidney beans, cumin, salt and coriander stalks. Bring to boil and cooked evenly.
