Chilli & Garlic Stewed Beans

The cooler climes invite hearty, warming meals such as stews and soups. This Mediterranean inspired dish is a filling and somewhat indulgent example of how effective they can be.

Enjoy the chilli and garlic additions which boost your immune system during this time of year, and the meatless protein and fibre from the beans.



Preparation Time: 5 minutes
Cooking Time: 30 minutes
Makes: 4 servings

Ingredients
1/4 cup extra virgin olive oil
2 x cans borlotti beans (or 500g dried)
2 carrots, finely diced
2 brown onions, finely sliced
2 celery sticks, finely diced
1 tbsp white win vinegar
vegetable stock

Chilli & Garlic Oil
2 tbsp garlic, crushed
1/4 cup red chillies, chopped
1/4 cup extra virgin olive oil

To serve
cracked black pepper
4 portions steamed rice, or
4 thick slices bread

Method
Heat the oil in a pot, and add the carrots, onions and celery, cooking until softened.

Add the beans, white wine vinegar, and enough vegetable stock to just cover the mixture. Leave to simmer for 20 minutes.

Combine the chilli, garlic and oil in a small bowl and mix well.

Stir the chilli and garlic mixture through the beans, and continue cooking gently for a further 5 minutes.
Remove from heat and serve alone, or with a bed of steamed rice or thickly sliced bread.
