Chilli Seafood Linguine

The zing of chilli and the delicious flavours of seafood make this pasta dish an absolute winner.



Preparation Time: 5 minutes
Cooking Time: 30 minutes
Serves: 4

Ingredients
350 g linguine
750 g marinara mix (fish, prawns, mussels, calamari)
1 tbsp olive oil
1 onion, finely chopped
700 g Passata
1 cup of water
1 tbsp garlic paste
2 tbsp Italian herb paste
2 tbsp mild chilli paste
2 tsp sugar, optional
salt & pepper

Method
Heat oil in pan over medium heat and gently fry garlic and onion until soft.

Add Passata, water, garlic, herbs and chilli. Simmer for 15 minutes until flavours have combined and sauce should thicken slightly.
Taste and season with salt and pepper accordingly. If your sauce is too tart, you may need to adjust by adding some sugar.
Meanwhile cook linguine as per directions on pack.
Add marinara mix to the sauce, cover and simmer for a further 3 4 minutes until seafood has cooked through.

When cooked, drain fettucine and add to marinara mix.
Serve with crusty garlic bread or a fresh salad.
