Chinese Chicken Soup 当归鸡汤

A bowl of chicken soup is always my to go comfort food when i feel weak or almost sick especially during winter. The aroma of the chicken broth always fills up and warms the whole house. This is a fairly simple chicken soup with very little effort needed.

Preparation Time: 10 minutes
Cooking Time: 1 hour or more
Makes: 5 servings

5 drumsticks
3-5 tbspn Concentrated Chicken stock
5 tbspn Sesame Oil
1L boilling water

Dry ingredient:
5 shitake mushrooms
10-15 Goji berries
10 Red Jujube
10 Chinese angelica slices

Rinse the dry ingredient with running water.

In a large pot on high heat, pour in the sesame oil.

Roughly pan fry the drumsticks until they turn golden brown.

Put in the rinsed dry ingredients and pan fry them for a while.

Pour in the concentrated chicken stock and mix well.
(You can use the pre-packed 1L chicken stock as well if you do not have the concentrated chicken stock)

Pour in the boiling water.
(This step is not required if you are using chicken stock)

Using medium heat, let the soup boil for at least an hour or two. (I left mine boil for 4 hours)

Serve with steamed rice or flavored rice (I use my homemade chicken rice)
