This simple slice recipe is a real hit. The tasty texture and umami of walnut is complemented by a delicious, gooey, buttery caramel atop a sweet, short, biscuit style base. Add some delicious dark chocolate on top and you have slice perfection.

Makes: Approximately 25 servings depending on the size you cut your squares
Ingredients Base Ingredients
225g salted butter
2/3 cup brown sugar
2 cups plain flour
110g salted butter
1 cup brown sugar
1/3 cup honey
2 tbsp thickened cream
370g raw unsalted walnuts
500g dark cooking chocolate
Preheat oven to 180˚C and line a deep rectangular baking dish with baking paper.
Start making the base by creaming the butter and sugar until light and fluffy.
Add the flour and mix on low speed until you get a crumb.
Press the mix evenly into the base of your baking dish and bake in the oven for 20 minutes.
When there’s ten minutes left of baking time on the base, start making the topping.
In a saucepan on medium heat, cook the butter, sugar, honey and cream until the sugar dissolves.
Add the walnuts to the butter mix stir to coat.
Remove the base from the oven and pour the walnut caramel over the top, then return to the oven for ten minutes.
Remove from the oven and allow to cool while you melt the chocolate over a double boiler.
Pour the melted chocolate over the top of the caramel and smooth with a spatula.
Allow to cool and set before you slice into squares.
