Choc Chip Hot Cross Buns

It's not Easter without hot cross buns. Here's a recipe for those among us who aren't so partial to sultanas.

Preparation Time: 1.5 hours
Cooking Time: 20 minutes
Makes: 16 servings


For the Buns:
2Tbs instant dried yeast
1/2cup sugar
11/2cups lukewarm milk
41/2cups plain flour
2tsp cinnamon
1tsp salt
50g butter melted
1 egg, lightly beaten
1cup of milk chocolate chips
1cup of dark chocolate chips

For the Crosses:
1/2cup flour
1/3cup water
1tsp caster sugar

For the Glaze:
1/4cup caster sugar
1/4cup hot water
1tsp powdered gelatine


Mix milk and sugar together and sprinkle the yeast over the top. Mix to remove any lumps then set aside for 15 minutes or until foamy.
Sift four and cinnamon together in a large bowl and add salt. Create a well in the centre and add the yeast mixture, butter and egg.


Stir gently, pulling flour into the centre to form the dough. When almost combined, add the chocolate chips.


Turn out onto the bench and kneed until smooth (about five minutes). If the dough is too sticky to work, sift over some more flour until it is easy to handle.
Place dough in a grease bowl and cover with a teatowel. Leave in a warm spot for 1 hour or until it has doubled in size.

After 1 hour, punch down the dough then kneed lightly for 2 more minutes. Divide into 16 balls and place side by side in rows of four on a lined baking tray.
Cover with a teatowel and leave to rise for 20 minutes.

While the dough is sitting, prepare the mix for the crosses. Add all ingredients together and stir to combine. Transfer mixture to a piping bag with a 5mm round nozzle.

Once dough has sat for 20 minutes, pipe the crosses on the bun then bake in the oven for 15 - 20 minutes.

Just before the buns are ready, prepare the glaze by combining all ingredients in a bowl. Brush over buns as soon as you take them out of the oven.

Serve warm or cool with butter or just as they are.
