These Choc Chip Peanut Butter Cookie Balls are a great treat for the lunch box or to have with a cup of tea. They are a little bit different from the normal cookie. When I created this recipe I had two of my favourite treats in mind; the chocolate ball and the choc/nut cookie. Rolling the dough into a ball keeps the cookie softer than if it was flattened to crisp up.
Ingredients ¾ cup plain flour
¼ brown sugar
¼ tsp vanilla essence
¼ tsp bicarb soda
80g dark chocolate chips
1 heaped tbs peanut butter
2 tbs crushed nuts
Extra flour to roll the dough in
Preheat your oven to 200 degrees.
Melt the butter in the microwave and pour into a bowl.
To the butter, whisk in the peanut butter.
Add the sugar, flour, bicarb, vanilla essence, chocolate pieces, nuts and egg.
Mix well until the dough forms.
On a small plate sprinkle some flour.
Roll teaspoon amounts into the flour and place the balls on a greased tray.
Bake for 12 mins and allow them to sit for 5 mins before eating.
