These cookies are made with chocolate chips and crunchy peanut butter, they are so sweet and delicious.
Preparation Time: 20 minutes
Cooking Time: 15 minutes
Serves: makes 24 cookies
Ingredients 125g softened butter
125g crunchy peanut butter
1/2 cup brown sugar
1/2 cup castor sugar
1 cup plain flour
1/2 teaspoon vanilla essence
1 teaspoon bi-cab soda
1 cup dark chocolate chips
1 large egg
Preheat oven to 160 degrees and line two baking trays with non-stick baking paper.
Beat butter and sugars until light and fluffy. Add the peanut butter, vanilla and the egg and continue to beat until it is well incorporated.
Gently stir in the chocolate chips with a spoon then, sift in the flour and the bi-carb soda. Mix together until its all combined and forms the cookie dough.
Roll heaped teaspoons of the dough into balls, place on the baking tray, and flatten slightly. Leave 3-4 cm spaces between each one, they spread out quite a lot.
Bake in the preheated oven for 12-15 minutes until lightly golden.
