Choc Mint Cupcakes

Choc Mint Cupcakes - it says it all! The combination of a moist chocolate cupcake topped with peppermint frosting tastes absolutely beautiful. Enjoy one of these cupcakes either during the day as a snack or for dessert after dinner.

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 12 cupcakes


Chocolate cupcakes:
3 eggs
6 tablespoon butter, softened
1 cup sugar
cup milk
1 cups self-raising flour
100g melted chocolate
1 tablespoon cocoa powder,

Mint Frosting:
6 tablespoon butter
1 cup icing sugar
1 teaspoon peppermint essence
1 tablespoon milk (extra if required)
Chocolate sprinkles


Chocolate cupcakes:

Preheat the oven to 180C and line cupcake pan(s) with cupcake papers.

In a mixing bowl, beat eggs, butter and sugar until light and fluffy.

Add milk, flour, melted chocolate and cocoa powder to the mixing bowl and beat with an electric mixer until combined and smooth in consistency.

Using an ice-cream scoop, scoop the batter into the lined cupcake pan(s) and bake for 20 minutes (depending on your oven, baking time may vary).

Mint Frosting:
Beat the butter until creamy.

Add the icing sugar, milk and peppermint extract and beat on high until combined (creamy and smooth).

If buttercream is too dry, add one tablespoon of milk (or more if required). To thicken buttercream, add more icing sugar.

Frost cupcake and sprinkle with chocolate sprinkles.
