Chocolate Blondies with White Chocolate

I made these white chocolate blondies for a family afternoon tea. They were well loved and I had several requests for the recipe. These blondies are perfect for lunch boxes, afternoon tea, morning tea and parties.

Preparation Time: 15 minutes
Cooking Time: 40 minutes
Serves: 18 - 20 slices

Ingredients
150 g white chocolate
100 g butter, melted
2 eggs, whisked
1 tsp vanilla essence
1 1/4 cups plain flour
150 g white chocolate chips (additional)
3/4 cup sugar
icing sugar, to dust

Method
Preheat oven to 160C and grease and line a 16 x 26cm slice pan.
Melt together the butter and 150 g white chocolate. Set aside to cool for 5 minutes.
Add the eggs and vanilla essence to the chocolate mixture and stir to combine.
Add the plain flour, chocolate chips and sugar to the bowl and stir until combined.

Pour the mixture into the prepared slice pan and bake for 40 minutes.

Set aside to cool in the pan for 4-6 hours before dusting with icing sugar and slicing into 18-20 slices.
